French Toast with Berry Compote

Difficulty : Easy

Serves: 2 – 3 people

Ingredients:

Ingredients for French Toast

  • 2 Eggs
  • 40 ml of Cream
  • 40 ml of Milk
  • 25 g of Sugar
  • ½ tsp of Ground Cinnamon
  • 1 tbsp of Elaiese’s Red Palm Oil
  • 2 slices of White Bread (halved)
  • 15g of Peanuts (toasted) as garnish
  • Maple Syrup as garnish
  • Icing Sugar as garnish                                                                  

Ingredients for Berry Compote

  • 40 g of Sugar
  • 15 ml of Orange Juice (Frozen Mixed)
  • 150 g of Berries

Instructions:

  1. To make the toast, place the eggs, cream and milk in a bowl. Whisk until well combined.
  2. Combine sugar and cinnamon in a small bowl. And set aside.
  3. Pour the red palm oil in a non-stick pan over medium heat. Dip the bread, 1 at a time into the egg mixture until soaked.
  4. Cook the bread on the pan until each side is golden brown in colour and toss the toast in the sugar mixture to coat.
  5. To make the berry compote, place sugar and orange juice in a small saucepan. Stir and bring the mixture to a boil and let it cook until mixture is slightly thickened. Remove from heat and stir in the frozen berries.
  6. Serve the toast with maple syrup, berry compote, toasted peanuts and garnish with icing sugar.
