Banana Fluffy Pancakes

Difficulty: Easy

Serves: 2 – 3 people

Ingredients:

  • 200 g of All-Purpose Flour
  • 4 tsp Baking Powder
  • ¼ tsp Baking Soda
  • A pinch of Salt
  • 3 tbsp Sugar
  • 1 Egg
  • 300 ml Milk
  • 60 ml ELAIESE Red Palm Oil
  • 2 Bananas (mashed)
  • Maple Syrup/ Honey for drizzle

Instructions:

  1. Combine flour, baking powder, baking soda, salt and sugar in a large bowl. Make a well in the centre and add in the milk, egg and red palm oil. Whisk well until there is no more lumps and mix in the mashed bananas. Set aside to let it rest for 30 minutes.
  2. Heat up a non-stick pan over low-medium heat. Grease the pan with a little butter and pour ¼ cup of the batter onto the pan.
  3. Flip the pancake with a spatula after the underside is golden in colour and bubbles begin to appear on the surface. Repeat with the remaining batter.
  4. Serve with maple syrup, sliced bananas, or your favourite fruits!
