Ingredients:
Fruits:
- Pineapple – cut into rings
- Fresh figs – halved
- Ripe but firm banana – halved
Marinade:
- 1 tbsp ELAIESE
- 1 tbsp palm sugar syrup or maple syrup or honey
- A inch of crushed black pepper
- 250g Mascarpone (may substitute with full fat yogurt)
- 2 tbsp ELAIESE
- 2 tbsp palm sugar syrup
Garnish:
- Mint and sweet basil
Instructions:
- Marinate the fruits with mascarpone cheese, palm sugar syrup, ELAIESE, and crushed black pepper corns.
- Caramelise the marinated fruits on a pan with ELAIESE.
- Whisk the mascarpone, sugar, syrup, and ELAIESE. Set aside.
- Plate the fruits and add on the mascarpone mix.
