Serves: 2 – 3 people
Ingredients:
- 3 Eggs
- 300ml Warm Water
- ½ tsp Salt
- 1/8 tsp White Pepper
- 1 Salted Egg Yolk
- 2 Shallots (chopped)
- 2 tbsp ELAIESE Red Palm Oil
- 1 tbsp Spring Onions (chopped)
- 2 tsp Light Soy Sauce for garnish
Instructions:
- Crack the eggs into a large bowl. Lightly beat the eggs and slowly add in the warm water. Season with salt and pepper.
- Strain the egg mixture into a shallow heatproof bowl or plate.
- Break the salted egg yolk into small chunks and add into the egg mixture; scattering around the mixture.
- Cover the egg with a cling wrap and gently place the bowl onto a prepared steamer. Steam the egg on low heat for 7 minutes or until set.
- Meanwhile, fry the shallots with red palm oil over a medium heat pan until golden brown and set aside.
- Sprinkle the shallots and spring onions on the steamed egg and lightly pour some soy sauce over it before serving.
