Ingredients
- 3 tbsp ELAIESE
- 200g Basmati Rise (soak for 30 minutes), rinsed, and drained
- 200ml Water
- 100ml Evaporated milk
- 9 Small shallots – peeled and sliced
- 1 inch ginger – peeled and grated
- 1/4 peeled pineapple – blended
- 1 Pandan leave – knotted
- 1 tbsp Rock sugar
- 1 Small handful raisin fried in ELAIESE until plump
- Coriader – chopped to garnish
- Salt to taste
- 1 Cinnamon stick
- 5 Cardomoms
- 3 Cloves
- 3 Star anise
Instructions
- With ELAIESE in the pan, fry together with the spices (cinnamon sticks, cardomoms, cloves, and star anise) and pandan leafs.
- Add in sliced shallots and fry until caramelized.
- Add in rice.
- Add in all liquids (milk, pineapple, water).
- Add in rock sugar.
- Once all is cooked, put all into rice-cooker and cook rice as usual.
