Serves: 2-3 people
Ingredients:
- 1 Whole freshly grated coconut
- 5 tbsp dried shrimp
- 3 cloves garlic
- 7 Shallots
- 1 inch galangal
- 3 sliced lemongrass
- 1 tsp turmeric powder
- 2 tbsp chilli powder
- 2 tbsp grated palm sugar
- 1 tsp ground toasted coriander seeds
- 1 tsp ground toasted cumin seeds
- 7 tbsp ELAIESE Red Palm Fruit Oil
- Salt to Taste
Instructions:
- Blend the dried shrimps, garlic, shallots, galangal, lemongrass, turmeric powder, chili powder and water until it becomes a consistent paste.
- In a pan, heat up ELAIESE oil and fry the blended spice paste for 5 – 10 minutes or until fragrant.
- Afterwards, mix in the grated coconut and fry until it has soaked all the spice mixture.
- Add ground coriander and cumin seeds and mix until combined.
- Add the grated palm sugar and season with salt to taste.
- Serve hot and enjoy
